Or lunch as the case may be. @ Taverna Romana. A stones throw from the colosseum. I had to eat here before I left the eternal city. Cacio e Pepe. In the past the shepherds carried in their saddlebags a few pieces of matured pecorino, dried pasta and a few peppercorns to warm up on cold nights. Chunks of lard added heat and flavor. The lard was melted in a cold pan over an open fire. In those starry nights this dish was born. Simple yet rich. He who has least has the most. It’s not what you have - not what resources you have - but rather how you use them. This lunch, heavy and rich, a reminder we are given yet one life. Live all you can. Carpe Diem.
